In summer, you may be transported all the way from the banks of the River Clyde to the banks of the Kaiwilahilahi River by partaking of a delightful coconut fancy from Watsons of Shaw Street.
The tender coconut, generously rolled around the cakey buns, conjures up a pleasant dream of swinging languidly on a hammock strung between two palm trees whilst sooking a long cool drink through a paper straw.
The treat on the left is moist yellow-ish cake, smothered in jam and drenched in coconut and is, of course, an Eiffel Tower. Sometimes, they are taller than this one which is looking a bit squashed, but still chic in a Parisian sort of way.
The white one on the right is called a "Snowball" and has more to it than meets the eye. The round cake is cut in two and jammed together, covered in sweet white icing and coated in mouthwatering coconut pieces. Deeeee-lish, especially with a cuppa.
The wee fella above seems to have a cheery face and a cheeky wee personality of his own. A particularly nice variation with added jam and a skoosh of cream.
This fusion of tasty home baking, jam and coconut seems just what's needed on a wet, dreich day at the height of the Scottish summer. Thanks Watsons the Baker, once again!
